Things You'll Need:

  • 1 box of Odense Almond Paste
  • All purpose flour
  • Sugar
  • Butter
  • Baking powder
  • Salt
  • White from 4 large eggs
  • Vanilla extract
  • Sliced almonds
  1. Step 1

    Heat the oven to 325 degrees. Stack 2 baking sheets on top of each other. Coat the top sheet with cooking spray.

  2. Step 2

    Shred the almond paste on large holes of a grater. Add 1 ¾ cups of all purpose flour, ½ cup of sugar, 1 stick of cold butter, and ¼ teaspoon of salt into a food processor. Pulse until the mixture resembles small crumbs.

  3. Step 3

    Whisk the egg whites and ½ teaspoon of vanilla extract in a large bowl until it becomes frothy. Add the flour mixture and 1 cup of sliced almonds; beat with a large spoon until the dough holds together. Press on a lightly floured surface into a disk; cut it in half.

  4. Step 4

    Shape each half into a 10 inch log. Flatten the logs gently to ½ to ¾ inches high. Using a pastry scraper or spatula, transfer to stacked baking sheets.

  5. Step 5

    Bake for 20 to 30 minutes or until lightly golden and firm to the touch. Place the sheets on a wire rack to cool. When the biscotti cools, cut it diagonally with a serated knife into ¾ in slices. Lay the slices flat on stacked sheets.

  6. Step 6

    Bake for 30 minutes until toasted . Let it cool completely.
