This is a great, healthy recipe for a Mediterranean pasta with lots of healthy leafy greens and tomatoes. A delicious way to get cancer-fighting nutrients!

Instructions

Things You'll Need:

  • Spaghetti
  • Diced fresh or canned tomatoes
  • fresh garlic
  • 1 pound of chopped red or green swiss chard
  • dry white wine
  • fresh parmesan cheese
  • black olives
  • extra-virgin olive oil
  • 1/2 white onion
  • salt and pepper
  1. Step 1

    Heat pasta water to a boil, add salt. While water is heating, thinly slice 1/2 of a medium white onion, a few cloves of garlic, and chop 1 pound (approx) of red or green swiss chard, including stems. If using fresh tomatoes, chop and save juices

  2. Step 2

    Add 2 tbs. of extra virgin olive oil to deep skillet, heat over medium. Add onion, cook until clear, then add garlic. Cook for approx. 2 minutes.

  3. Step 3

    Add 1/2 cup dry white wine to pan. Reduce heat, add chopped swiss chard, salt and pepper to taste. When chard has cooked down, add tomatoes. While this is cooking uncovered, prepare spaghetti. After pasta is cooked and drained, mix with swiss chard and tomato mixture, and top with grated parmesan cheese, black pepper or red pepper flakes, and chopped olives.

Tips & Warnings
  • Use a decent white wine! Don't cook with one you wouldn't drink.
  • This pasta goes nicely with crusty French bread
