Nothing gets you through a cold winter night better than a piping hot bowl of hearty chicken and tortellini soup. This personal recipe is loaded with tasty goodness and incorporates rotisserie chicken and fresh pasta for a truly delicious experience.

Instructions

Things You'll Need:

  • 1 rotisserie chicken
  • 64 oz. chicken broth
  • 1 large pkg buitoni fresh cheese tortellini
  • 2 ea. carrots/celery
  • 1 onion
  • 1 tsp. butter/margarine
  • 1 tsp. oregano
  • 1 tsp. basil
  • fresh chopped parsley
  • salt/pepper to taste
  1. Step 1

    Using a large stock pot, saute carrots butter, adding diced onion and celery continue to cook until the onion is translucent.

  2. Step 2

    Add 64 oz. chicken broth. Bring to a boil. Add package of tortellini. Bring back up to a boil. Lower to medium heat, add basil and oregano and cover pot.

  3. Step 3

    Remove chicken from the bone. Dice or shred according to your preference. This recipe calls for approximately half of a chicken.

  4. Step 4

    When tortellini are just about done, add chicken and chopped parsley.

  5. Step 5

    Lower heat and simmer for an additional 2 - 3 minutes. Ladle into bowls, garnish with parsley and serve with a loaf of crusty italian bread.

Tips & Warnings
  • Tortellini's will expand as they cook, absorbing broth. Use less tortellini or add more broth if you prefer.
  • Recipe is resilient and adapts well to small, personal changes.
