How to Make Sugar Free Cookies

Everyone loves a sweet treat, but not everyone can have them. Many people are diabetic and cannot consume real sugar because of the spike it causes in their insulin levels. Others are watching their health and their weight and choose not to eat it for the same reason. Instead of going without, there are many options available for those with a sweet tooth. Try making a batch of sugar-free cookies using Stevia or Splenda: Stevia is a natural herb that does not cause a rise in insulin levels, and Splenda, according to the FDA, isn't treated as a sugar or a carbohydrate in the body, and therefore doesn't raise sugar levels, either.

Things You'll Need:

  • Hand or electric mixer
  • Sifter
  • Stevia powder or Splenda
  • Flour
  • Unsweetened applesauce
  • Salt
  • Baking soda
  • Eggs
  • Cinnamon
  • Water
  • Parchment paper
  • Cookie sheet

    Sugar-Free Cinnamon Cookies With Stevia

  1. Step 1

    If you are using Stevia as your sugar substitute, note that the conversion ratio is 1/4 tsp. of Stevia for every teaspoon of sugar. If you are using liquid Stevia, that would measure out to 2 to 3 drops. Be cautious when using Stevia, as it can have a bitter aftertaste if you use too much. Since Stevia can be processed in different ways, resulting in different flavors, it is always best to add it to your recipes a little at a time and do taste tests. If you use Splenda as your sugar substitute, the ratio is 1:1, so use 1 tsp. of Splenda for 1 tsp. of sugar.

  2. Step 2

    Pre-heat your oven to 375 degrees F. Using a hand or electric mixer, beat two eggs and 2 tbsp. of water until the mixture is frothy and fluffy.

    To this mixture, add 1/8 tsp. of Stevia powder, 1/4 cup of applesauce and 1-1/4 teaspoon of cinnamon. Mix again with the hand mixer for 1 minute.

    Using the sifter, sift 1-1/2 cups of flour, 1/2 tsp. of baking soda and 1/4 tsp. of salt into a mixing bowl. Take half of this mixture and gently fold it into the egg mixture. Once the first half of the dry mixture has been folded in, repeat with the second half.

  5. Step 5

    Line a cookie sheet with parchment paper. Drop by the teaspoon onto the paper, and sprinkle a dash of cinnamon on top of each cookie if you desire. Place in a 375-degree oven for 10 to 12 minutes. This will make 1 dozen cookies.

Tips & Warnings
  • You can convert any cookie recipe to a sugar-free one by using the conversions in Step 1. Make recipes even healthier by substituting applesauce for oil.
  • Always do a taste test when adding sugar substitutes to a recipe. Add slowly, as you can always add more, but you can't remove it once it has been added.
