Even if you are biscuit challenged and have turned out rocks from the oven in the past, you can now make perfectly fluffy biscuits straight from the oven. Your friends and family will not believe they are homemade!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 stick ice cold salted butter (No butter substitutes. Use the real thing.)
  • 2 cups ice cold bread flour (I keep mine in the freezer.)
  • 1/4 teaspoon baking soda
  • 1 Tablespoon plus 1 teaspoon baking powder (aluminum free)
  • 1/2 cup shredded cheddar cheese
  • 1 Tablespoon white vinegar
  • 3/4 cup whole milk (No lower fat substitutes.)
  • 1/4 cup melted butter
  • 1/4 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried basil
  1. Step 1

    To make your perfectly fluffy cheddar biscuits, begin by preheating your oven to 400 degrees. Combine your ice cold butter (I prefer Land O'Lakes or Trader Joe's butter.), ice cold bread flour, baking soda, baking powder, and cheddar cheese in the bowl of your food processor (Cuisinart and KitchenAid are popular and reliable brands.), fitted with a regular cutting blade.

  2. Step 2

    Pulse your food processor just until the mixture resembles cornmeal. Do not over pulse.

  3. Step 3

    Combine whole milk and white vinegar.

  4. Step 4

    Add the milk and vinegar mixture to the flour mixture in the bowl of your food processor.

  5. Step 5

    Pulse your food processor just until the mixture begins to come together. Do not over process the mixture or you will make tough biscuits rather than fluffy ones. The mixture will not look uniform. It will just begin to stick together slightly.

  6. Step 6

    Carefully turn your biscuit dough onto a cutting board and lightly pat it together to a thickness of about 1 inch. Do not use a rolling pin or your biscuits will be tough. Handle as little as possible.

  7. Step 7

    Use a drinking glass or a biscuit cutter to cut biscuits out of the dough.

  8. Step 8

    Place your biscuits onto a parchment lined airbake cookie sheet. Reynold's makes parchment paper available by the aluminum foil in the grocery store. Make sure the biscuits are touching. This creates a softer biscuit.

  9. Step 9

    Place biscuits into preheated 400 degree oven. Let them bake for 15-20 minutes, until slightly golden brown and no longer doughy.

  10. Step 10

    While the biscuits are baking, combine melted butter with garlic, basil, and thyme.

  11. Step 11

    After you take the baked biscuits out of the oven, use a pastry brush to spread the melted butter mixture over the tops of the biscuits.

  12. Step 12

    Allow the biscuits to cool for a minute or two and then enjoy while they are still hot. There you have it, your perfect, fluffy cheddar biscuits. No more ordering out from Bojangles or Red Lobster because your biscuits are bricks!
