Chicken wings gained popularity in 1964 when Teressa Bellissimo whipped up a snack for her son and his friends by frying up some wings and sauce thus emerging out of the Anchor Bar in Buffalo New York is the very popular snack buffalo wings.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Fresh clean, light oil
  • Fresh, not frozen, wings
  • Salt
  1. Step 1

    Preheat oil in fryer to a low temp around 280 degrees

  2. Step 2

    Wash fresh wings with cold water, pat dry with paper towels

  3. Step 3

    Sprinkle lightly with either plain or garlic salt, make sure to avoid too much salt, salt breaks down the oil.

  4. Step 4

    Fry chicken wings till half done, turn up oil to 375 then refry wings until completely cooked through, this step usually takes 4-6 minutes. I prefer mine a little overdone and dark brown.

  5. Step 5

    At this point you can baste with a favorite hot sauce then bake sauce onto the wings until nice and glazed or use wings to dip into a favorite dressing such as blue cheese or ranch.

Tips & Warnings
  • Research hot sauces and glazes, the variety of sauces are endless
  • Serve with celery sticks, Fries, hush puppies , jalapeno poppers, onion rings or just eat plain.
  • avoid putting wet wings in hot oil, the water descends to the bottom of the fryer producing steam that instantaneously explodes upward and outward usually producing a fireball, or the least hot oil spattering outward.
  • If a fryer fire erupts, place lightly damp cloth over the fryer or for larger fryers place the metal lid and if safe turn off fryer via a breaker box or switch located outside of kitchen.
  • Know were the breaker box is located for the outlet is and use fresh oil as much as possible.
  • Make sure escape routes are thought out in case of fire and no children or pets are allowed around hot oil.
