Read an article the other day on how to make flourless peanut butter cookies and decided to give it a try. The result was TOTALLY yummy! But I wondered if I could give it more of a flavor than just peanut butter. So I added bananas. When the batter became very loose, I tried adding an equal part of flour to the peanut butter & voila! Pandemonium Awesomeness! ~<3

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Large Mixing Bowl
  • Measuring Cups
  • 2 Cookie Sheets
  • Fork
  • Large Tablespoon
  • 1 Cup Chunky or Creamy Peanut Butter
  • 1 Cup Sugar (Brown Sugar Okay)
  • 1 1/2 Cups Flour
  • 1 Egg
  • 2 Ripe Bananas
  • White Chocolate Chips (optional)
  1. Step 1

First, preheat oven to 375 degrees. You'll need to make sure the temperature is piping hot because these yummy little morsels bake very quickly.

Add peanut butter, sugar, flour, and egg into the large mixing bowl. Mix these ingredients together with a fork. Sometimes its easier than a spoon when you're dealing with a thick batter.

  2. Step 2
Mix in banana, Spoon into mounds

In another bowl, mash the two bananas until they are a little gooey, but still has a chunky consistency. Be sure the bananas are ripe and room temperature. Not refrigerated or frozen. Add this to the mixture in the larger bowl and mix until fully mixed throughout the batter. This is the step where you can add in the white chocolate chips.

Dust the sheets with lightly with flour. Use the large tablespoon to measure amount of cookie mixture for each cookie. Space each (heaping) spoonful of mixture about an inch and a half apart. I like to stagger the batter mounds, but you can place them however you like.

  3. Step 3
    Place on CENTER rack

    Place on CENTER rack

Lastly, place cookie sheets side by side on the CENTER RACK. I had a mishap where I had a third sheet and decided to put it on the bottom rack. BIG MISTAKE. The bottom of the cookies burnt around 6 minutes, while the cookies on the middle rack were still a bit gooey.

They will take about 15-20 minutes to completely cook. You'll know they're done because they'll be slightly brown around the bottom edge and the top of the cookie wont be gooey. The top may cave in slightly, but should be done if you don't pull back a moist finger. ;)

Once done baking, place on flat surface to cool. Once cool, eat away! Should make about 18 cookies, depending on how large you want them.

Tips & Warnings
  • Be sure to be careful when checking the the cookies. Dont burn yourself! :)
