How to Make a Turkey Carrot Loaf

This is great alternative to the traditional meat loaf. It's much lower in fat, and packed with beta carotene. Serve it with mashed potatoes and a salad for a complete meal.

Instructions

Things You'll Need:

  • 1.2 lbs. ground turkey
  • 2 eggs
  • 1 cup plain bread crumbs
  • 1/4 cup catsup plus 1/8 cup of catsup
  • 1/4 cup of Worcestershire sauce
  • 1 small onion
  • 2 medium carrots
  • 1 Tbsp. dried parsley
  • a 1.5 quart loaf pan
  • an oven
  1. Step 1

    Preheat your oven to 350 degrees. Place your rack in the middle of the oven for even baking.

  2. Step 2

    In a large bowl mix 1.2 lbs. of ground turkey, 2 slightly beaten eggs, 1 cup of plain bread crumbs, 1/4 cup Worcestershire sauce, 1/4 cup catsup, 1 small onion finely chopped, 2 medium carrots that have been peeled and finely shredded, 1 Tbsp. dried parsley.

  3. Step 3

    Take this mixture and press it into a 1.5 quart loaf pan that has been sprayed with non-stick cooking spray (Pam).

  4. Step 4

    Spoon 1/8 cup of catsup onto the top of the loaf. You can omit this step if you're not too crazy about catsup.

  5. Step 5

    Place the loaf into the oven and bake for 1 1/2 hours. Take out and let rest for 15 minutes before serving.

Tips & Warnings
  • This is a great dish to serve to picky kids who don't like to eat their veggies. It's also a lower fat alternative when your watching your weight.
  • Be sure to test the internal temperature of the loaf with a meat thermometer. It should register at 170 degrees.
