1
CHECK THE DISHWASHER INSTALLATION -
If you have a garbage disposal in your sink and have noticed an odor coming from your dishwasher, check the height of drainage hose connection. It may be that your dishwasher is not able to fully pump the waste from the base all the way to the garbage disposal. Ensure the connection is not at too far of an angle or that the height difference isn't too extreme for the waste to adequately drained from the dishwasher.

2
RUN YOUR WASHER FREQUENTLY -
Your dishwasher has rubber gaskets that prevent leaks in the drain hoses. When you leave your dishwasher empty for several days at a time, those gaskets can allow the dried out food to rot and deteriorate in the base. Make sure to run your dishwasher frequently to avoid food settling in the cracks and crevices or be sure to pour a cup or so of water to keep the gaskets moist. This will also prevent leaks in the future.

RUN YOUR DISHWASHER WITH VINEGAR -
Doing maintenance runs with your dishwasher will help eliminate any odors that may be lingering or bacteria that may be growing. If you are on a septic system it may be beneficial to your system to run an empty load using a cup or so of straight vinegar. You may notice a slight vinegar smell at first but that will dissipate within a few minutes. You can run the vinegar through your wash every week or two in order to maintain freshness.

4
CLEAN YOUR DISHWASHER BY RINSING WITH BLEACH -
You can remove dishwasher odor by running a cycle with a cup or of bleach if you are not concerned with the environmental effects of running bleach through your pipes or into the sewer. The bleach will help disinfect any grime and bacteria that may be lurking.
