This is an easy lasagna recipe that uses ravioli instead of lasagna noodles. You can prepare this ahead of time and bake when ready.

Difficulty: Easy
Instructions

Things You'll Need:

  • 2- 13 oz bags of frozen mini ravioli
  • 8 oz mozzarella cheese
  • 2- 12 oz containers of part-skim ricotta cheese
  • 1 egg
  • 1/3 cup chopped parsley
  • 1/4 teaspoon black pepper
  • 6 oz. marinara sauce
  • 1/4 teaspoon salt
  1. Step 1

In a large pot of boiling water, add ravioli. When ravioli rise to the surface continue to boil for about 8 minutes. Drain and rinse with cold water. TIP - I add a tablespoon of oil to boiling water to help keep ravioli from sticking to each other and the pot. It will be easier to put your lasagna together when the ravioli isn't sticky.

  2. Step 2

In a bowl mix together egg, salt, pepper, parsley and ricotta cheese. Mix well. Either grate mozzarella or slice thinly.

  3. Step 3

Line the bottom of a lasagna baking dish or oven-proof dutch oven with an even layer of spaghetti sauce. Place an even layer of ravioli on top of the sauce. Using half of ricotta, drop by spoonfuls over top of ravioli. Cover with 1/3 of mozzarella.

  4. Step 4

Place a layer of ravioli on top of cheese mixture. Use remainder of ricotta cheese and spread as you did in last step. Sprinkle with another 1/3 of mozzarella. Put remaining ravioli on top of cheese. Cover with remaining mozzarella and sauce. Your lasagna is ready to bake if you are. To cook and serve later you can cover this and freeze or refrigerate.

  5. Step 5

Bake covered in a pre-heated 350 degree oven for about 40 minutes. Allow lasagna to sit for about 5 - 10 minutes for cheeses to set. Enjoy!

Tips & Warnings
  • For a different taste use Spinach or Meat ravioli.
  • Substitute your favorite meat sauce in place of the marinara spaghetti sauce.
  • This recipe will serve a crowd!!! It reheats nicely or can be frozen in individual serving containers for a quick lunch or dinner.
