Things You'll Need:
- cube steak
- flour
- corn flake crumbs
- pepper
- Italian seasoning
- paprika
- egg
- canned evaporated milk
- oil
- skillet for frying
-
Step 1
First, you need to thaw and pound out your cube steak. You can do this with your hands. Place the cube steak on a cutting board or other flat surface and pound it with a vertical fist. Pound the meat until it's about 1/4 inch thick.
-
Step 2
Next you need to make the batter and egg mixtures. First find two flat containers (plates will work, but make a bit more of a mess). Make sure the pounded steak will fit. In the first container, add the canned milk and egg; whisk together with a whisk or fork. In the second container you will add the ingredients for your batter. Add the flour (about 1 cup per steak), corn flake crumbs (about 1/2 cup per steak), pepper (about 1 tsp per steak), Italian seasoning (about 1/4 tsp per steak), & paprika (just a pinch per 4 steaks). Mix together well.
-
Step 3
Add about 3 - 4 Tbsp oil to skillet and heat on medium heat.
-
Step 4
One of the most important steps is to dredge the steak TWICE! Once in the milk and egg mixture and once in flour batter. Then again in each mixture, first the milk and egg then the flour batter. Make sure that you press the meat well into the flour batter to get it into all of the cracks.
-
Step 5
You will flip the steak in the oil after about 2 -3 minutes or when red juices start to appear on the top and the bottom is golden brown. Repeat on other side to get a perfectly finished chicken fried steak. Serve with mashed potatoes and white country gravy and you'll have a great meal!!
