Things You'll Need:
- large raw shrimp
- onions
- vegetable oil
- tomato sauce
- diced tomatoes
- celery ribs
- green bell peppers
- garlic cloves
- smoked sausage
- long grain rice
- green onions
- cajun seasioning
- corn starch

Step 1
Butterfly the shrimp by making a deep slit down the back of each from the large end and go to the tail. Cut but not through inside the curve of the shrimp then devein the shrimp. I use around 4 pounds.

Step 2
Cook 3 large onions cut into 1 inch pieces in hot oil in a large skillet over medium heat for 35 to 40 minutes stirring occasionally until they are golden brown. Add 2 cans of tomato sauce and cook for 25 to 30 minutes until it becomes thick. Add 3 cans of diced tomatoes with zesty green chiles, 5 ribs of celery cut into 1 inch pieces, 3 green bell peppers seeded and sliced into 1 inch strips and 2 cups of water.

Bring the mixture to a boil over medium heat and let it simmer for 30 minutes until the sauce slowly thickens. Add 3 garlic cloves chopped and divided and simmer for 30 minutes. Stirring 1 to 2 cups of water as needed to maintain a stew like consistency stir in 1 pound of spicy smoked sausage sliced and let it simmer for 30 minutes. Stirring in 1 to 2 cups of water as needed.

Prepare the rice according to the package.

Stir 6 green onions chopped, 1 cup of freshly chopped parsley, the remaining 3 cloves of garlic into the sausage mixture. Let it simmer for 10 minutes. Add the shrimp and bring it to a boil over medium high heat.

Step 6
Stir together 1/4 cup of cornstarch and 1/2 cup of water. Stir into the shrimp and sausage mixture stirring until the mixture is thick and glossy. Serve over hot cooked rice.
