Things You'll Need:

  • all purpose flour
  • baking soda
  • salt
  • sugar
  • butter
  • egg
  • buttermilk
  • confectioners sugar
  • corn syrup
  • vanilla
  • milk
  • cocoa powder
  1. Step 1

    Cookies: Heat the oven to 350 degrees. Coat 2 baking sheets with cooking spray. In a medium size bowl, combine 1 1/3 cup of all purpose flour, 1/2 teaspoon of baking soda and 1/2 teaspoon of salt. In a large bowl with an electric mixer using medium speed, beat together 1/2 cup of granulated sugar and 1/3 cup of unsalted butter for about 1 minute or until it becomes creamy. Beat 1 egg until it becomes mixed well. On low speed beat in the flour mixture and 1/3 cup of buttermilk ending with the flour mixture and beat until smooth.

  2. Step 2

    For each cookie drop 1/4 cup of dough onto the prepared sheet spacing about 3 inches apart.

  3. Step 3

    Bake 1 sheet at a time in the oven for 13 minutes or until a wooden pick inserted in the center tests clean. Remove the cookies to the rack to cool.

  4. Step 4

    Icing: In a medium size bowl stir together 2 cups of confectioner's sugar, 2 tablespoons of corn syrup, 1/2 teaspoon of vanilla, 1 to 2 tablespoons of milk until it becomes smooth but thick enough to coat the cookie. Remove 1/4 cup; stir in 2 tablespoons of cocoa powder and the remaining 2 teaspoons of milk until smooth.

  5. Step 5

    Turn the cookies flat side up. Spread the white icing over one half of the flat side of each cookie and chocolate icing over the other half. Let the cookie stand at room temp until they harden.
