Things You'll Need:
- 2 boxes sweet potatoes
- butter
- ginger
- cayenne pepper
- salt
- milk
- thyme
- olive oil
- garlic
- black pepper
- red wine
- sour cream
- dijon mustard

Step 1
Potatoes: In a saucepan, combine the boxes of potatoes with one glaze packet, 1/4 cup of water, 1 1/2 teaspoon of ginger, a pinch of cayenne pepper and 1/2 teaspoon of salt. Cover and cook over medium high for 15 minutes until it becomes tender. Break it up with a masher and then add 1/3 cup of milk.

Step 2
Pork Tenderloin: In a cup mix 1 teaspoon of freshly chopped thyme, 1 teaspoon of olive oil, 1 mashed garlic clove, 1/4 teaspoon of salt and black pepper. Rub the mixture over the tenderloins. In a large skillet heat the remaining 1 tablespoon of oil over medium high. Add the tenderloins; sear them for 3 minutes per side until it becomes browned. Reduce the heat to medium low. Cover the skillet with foil and cook only turning the tenderloins over once for 8 to 12 minutes. Remove the pork and place them onto a platter.

Step 3
Add 3/4 cup of red wine to the skillet scraping up the bits from the bottom. On medium high simmer for 2 minutes then whisk in 2 teaspoons of dijon mustard and cook for 1 minute then remove it from the heat and whisk in 1/3 cup of sour cream. Slice the tenderloins and serve with sauce and sweet potatoes.
