Make A Cheesy Vegetarian Lasagna

This is a nutritious lasagna, made with whole-wheat noodles, lots of spinach, and that wonderful meat-less ground beef. The recipe serves eight.

Instructions

Things You'll Need:

  • 1 pound whole-wheat lasagna
  • boiling water for cooking lasagna
  • 3 tablespoons olive oil
  • 4-6 cloves of garlic, chopped
  • 1 cup chopped onion
  • 1/2 cup finely chopped carrots
  • 1 green pepper, chopped
  • 1 can mushrooms, sliced
  • 1 pkg (12 ounces) soy "ground beef" - Italian spicy is my choice
  • 1 tablespoon basil
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 3/4 teaspoon black pepper
  • 1 28 ounce jar good quality tomato sauce
  • 2 beaten eggs
  • 2 cups cottage cheese
  • 2 cups spinach, coarsely chopped
  • 1/2 cup grated Parmesan cheese
  • 2 cups grated Mozzarella cheese
  1. Step 1

    In a large pot, cook the lasagna, in the hot water. Follow packaging instructions regarding cooking time.

  2. Step 2

    In a heavy saucepan, heat the olive oil. Add the garlic, onions, and carrots. Saute until the onion and the carrots begin to soften. Add the green pepper and continue to saute until the onions are transparent. Quickly stir in the soy "ground beef' and the mushrooms. Continue to cook until all is heated through.

  3. Step 3

    Remove the mixture from the heat and add the basil, oregano, salt, and pepper. Stir to incorporate. Stir in the tomato sauce. Taste and adjust seasonings if necessary. Set aside. Heat the oven to 350 degrees.

  4. Step 4

    In another bowl, blend together the eggs, cottage cheese, spinach, and Parmesan cheese.

  5. Step 5

    In your lasagna pan, spread out about 1/3 of the sauce mixture. Onto this place 1/3 of the noodles, then 1/3 of the spinach mixture topped with 1/3 of the Mozzarella cheese. Continue to layer 1/3rds ending with a layer of Mozzarella.

  6. Step 6

    Cover the pan tightly with foil and bake for approximately 35 minutes. Uncover and bake for 5 to 10 minutes more until the top is nicely browned. Serve with a salad and some fresh fruit and you have a healthy and satisfying meal. Enjoy!
