How to cook Oven-Roasted Spare Ribs

Learn how to make delicious oven-roasted spare ribs. We like to use a lot of garlic in our recipe but you can use as much as you like!

Instructions

Things You'll Need:

  • 1 rack pork spare ribs (we prefer baby-back ribs)
  • Salt and pepper
  • Olive oil
  • Garlic
  • Bay leaves (fresh or dried)
  • Chicken broth
  • Dry white wine (you can use cooking wine)
  • Red-wine vinegar
  • Honey
  • Crushed hot red pepper
  1. Step 1

    Preheat the oven to 425 degrees F.

  2. Step 2

    Cut the rack of spare ribs between the bones into single ribs.

  3. Step 3

    Pat the spare ribs dry and season them with salt and pepper. Toss them in a roasting pan (or a glass baking dish) with:
    1/3 cup extra-virgin olive oil
    12 cloves garlic, peeled
    4 fresh or dried bay leaves
    1 cup chicken broth

  4. Step 4

    Roast for 45 minutes to an hour. Turn occasionally until the ribs are golden brown.

  5. Step 5

    While the ribs are roasting, make the glaze:
    1 cup dry white wine
    1/2 cup red-wine vinegar
    2 Tablespoons honey
    1-2 teaspoons crushed hot red pepper
    Stir together in a bowl until the honey is dissolved.

  6. Step 6

    Pour the glaze over the ribs (after roasting 45 mins-1 hr). Continue baking for another 20-30 minutes, turning every few minutes until the glaze is syrupy.

Tips & Warnings
  • crush each garlic clove with the flat of a large knife for more flavor
  • you can substitute the chicken broth with beef broth
  • for a sweeter rib you can add more honey to your glaze
  • after adding the glaze, we usually start cooking rice pilaf (20-30 mins) which goes very nicely with the garlicy ribs!
  • our favorite vegetable to serve with the ribs is broccoli!
  • keep an eye on the ribs for the last 20-30 mins of cooking to make sure they don't dry out and make sure you turn them several times to get a good coating of glaze
