How to Make Vegetable and Quinoa Soup

This soup has 5 vegetables and a serving of protein without using any meet. If you have never heard of quinoa it is a gluten free grain that is a complete protein. This is perfect for those who do not eat meet or gluten. This soup recipe is perfect for your immune system as well.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1-tablespoon olive oil
  • 1 bay leaf
  • 1-teaspoon garlic
  • 1 carrot
  • 2 sticks celery
  • ½ onion
  • 1 zucchini
  • 1 12 oz can tomato diced
  • 1-cup green beans frozen or fresh
  • 1 qt vegetable stock
  • 1-cup quinoa washed
  • 1and 1/4th cup water
  • salt and pepper to taste
  1. Step 1

    You first will want to dice the carrots, onion, celery, and zucchini into ¼ inch cubes.

  2. Step 2

    Then add oil to pan and turn to med-hi. Once oil is hot add garlic, onion, celery and carrot. Stir the vegetables often until onions are translucent. Then add drained tomatoes.
    Add vegetable stock, green beans, bay leaf, and zucchini. Let come to a simmer and turn down to medium heat. Stir often.

  3. Step 3

    In a separate pan boil 1 and a 1/4th cup water. Wash the quinoa in cold water and add to the water once it is boiling. Cover and reduce the heat to med-low for 12 minutes. Let stand for five minutes. By know your soup will be done. You can add the quinoa to the soup now.

Tips & Warnings
  • You can substitute different vegetables if you don't like the ones i use.
  • This soup freezes well as long as you don't put the quinoa in it.
