This is a different pork chop recipe that comes from my Hungarian heritage. Pork and sauerkraut makes a nice sit-down dinner. It can easily be doubled to feed a crowd. From start to finish it takes 1 hour!

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 lb. pork chops (boneless is ok but preferably use a thicker chop)
  • 1 tablespoon shortening
  • 1 teaspoon garlic powder
  • 1 teaspoon SZEGED brand Hungarian paprika (use regular paprika if you don't have this brand)
  • 2 cups sauerkraut
  • 1 tablespoon minced onion (dried)
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  1. Step 1

Preheat oven to 425. Using a paper towel, lightly grease a deep baking pan with shortening. Use something similar to a lasagna pan. Line the pan with the pork chops. Put pan in oven to brown pork. Turn pork chops to make sure both sides get browned. Be careful not to over brown the pork chops as this will dry them out. How long it takes to brown depends on the thickness of the cut of the pork chop.

  2. Step 2

In a small bowl, mix together spices. When pork chops are browned, sprinkle half of the spice mixture over the pork chops. Turn the pork chops so both sides have spices on them.

  3. Step 3

Drain most of the liquid from the sauerkraut. Spread the sauerkraut evenly over the pork chops. If you are a sauerkraut lover use more sauerkraut. Fresh or canned work equally well in this recipe. Sprinkle remaining spice mixture over the sauerkraut. Gently mix the spices into the sauerkraut with a fork. Cover with aluminum foil and turn oven down to 350 degrees. Pork and sauerkraut should bake for 25 minutes.

  4. Step 4

Serve with pork chops and sauerkraut with mashed potatoes for a delicious comfort food meal. This tastes even better the next day!

Tips & Warnings
  • As in most of my recipes salt can be deleted or added depending on your taste.
