How to Grill Radicchio - Easy and Delicious

Radicchio is the slightly bitter, red and white leafed vegetable that comes in many salad blends. You can also buy it whole, and it looks like a small round cabbage, about the size of a softball. One head of radicchio will serve 2 to 4 people.

Instructions

Things You'll Need:

  • 1 head radicchio
  • ¼ cup olive oil
  • 2 TBSN balsamic vinegar
  • 1 TSP finely chopped fresh rosemary
  • Salt and pepper to taste
  1. Step 1

    Preheat your grill to medium-high. Quarter the radicchio, cutting through the core so that each quarter remains intact.

  2. Step 2

    Mix the olive oil, balsamic vinegar, and rosemary in a large bowl. Toss the radicchio quarters in the oil mixture so that they are thoroughly coated. Place each piece on the grill so that one of the cut sides is on the grill. Let it sit there for about three minutes. Then turn so that the other cut side is on the grill for another three minutes. The edges should be browned and slightly crispy.

  3. Step 3

    Remove to a platter and arrange so that the cut sides are face up. Drizzle with a little more high quality balsamic vinegar, and sprinkle with freshly ground black pepper and kosher or sea salt. Serve immediately.

  4. Step 4

    This recipe can easily be doubled or tripled. I usually serve one quarter per person. If you have leftovers, you can chop it up and add it to a salad cold. It doesn’t do very well reheated in the microwave.

on 2/2/2009 Often over-looked veg! Raw bitterness gives it a bad rap. Grilled, indoors or on a grill pan, it's YUMMY!
