How to Cook and Enjoy Sauerkraut
Sauerkraut is an immune system booster,has a lot of vitamins and minerals and has cancer fighting properties.
So, we should eat it more often.
If you make your own at home, the best one is barrel sauerkraut. If not, you can get it at your local store.

To fully enjoy sauerkraut health benefits, you can drink the juice or make a wonderful salad to accompany your meal. For the salad, mix sauerkraut with oil, salt, pepper and a pinch a savory herb.

You can make a sauerkraut and ham or sausage stew. I sauté one small onion for 2-3 minutes, then I add 1/2 pound cubed ham or sausage, 2 pounds sauerkraut together with the juice and 5-6 tablespoons tomato puree. I season with pepper, thyme or savory herb. I bring it to a boil and let it cook until the sauerkraut is soft. Serve with sour cream and polenta, if you like it!
Be careful with the salt. I do not usually add extra because the sauerkraut has enough. -

Then you can make a layered casserole. In a skillet sauté an onion and 1 green pepper, add 1 teaspoon pepper and 1 teaspoon paprika. Add 1 pound minced meat, your choice and cook until the meat is done. Add 1 cup cooked rice and mix well. Season with pepper, thyme or savory herb.
In a oven resistant dish start layering sauerkraut, the meat mixture and 1-2 tablespoons tomato pasta. The last layer has to be sauerkraut and tomato paste. Put it in the oven at 375 and forget about it for about 2 hours. Serve with sour cream and polenta!
