Things You'll Need:
- 1 cup whole-wheat flour
- 1 cup oat bran
- 1 tbsp cornstarch
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp all-spice
- 1/2 tsp cinnamon
- 2/3 cup grated carrots
- 1/3 cup maple syrup
- 1 cup water
- 1/4 cup canola oil

Step 1
Preheat your oven to 375 degrees farenheit. Lightly grease with spray a muffin pan, or line the muffin pan with muffin cups.

In a large mixing bowl, combine all the dry ingredients together. Once combined, stir in the grated carrots. (To save time, instead of grating the carrots yourself buy them at the store already finely chopped). Once the carrots are mixed in, add the remaining wet ingredients and stir well.

Pour the batter into the greased or lined muffin pan and bake for 25 to 30 minutes, keeping and eye on the muffins... once they begin to brown on the top they are just about done. To make sure they are fully cooked, instert a toothpick or batter tester into the muffins... if the toothpick comes out clean, they are done... if batter sticks to the toothpick keep them in the oven for another minute or two keeping an eye on them. Serve warm or cold.
