My 7 year-old son has those pesky food intolerances that truly affect his mood, skin, stomach, sleep, etc.

It's fairly easy to avoid wheat, but add eggs to the list of no-nos and it gets interesting.

After two years of trying all sorts of recipes and products from the health-food store, I've finally created a winner that my entire family proclaims, "Yummy!"

Instructions

Things You'll Need:

  • 1-1/2 t. Egg Replacer (prepare with 2 T warm water)
  • 1/4 c. vegetable or canola oil
  • 1 t. vanilla
  • 1/2 c. white rice flour
  • 3/4 c. oat flour
  • 1/2 t. baking soda
  • 1/4 t, salt
  • 1/2 c. brown sugar
  • 1/4 c. white sugar
  • 1 T. Vegetable shortening
  • 1 T water
  • 3/4 c. quick oats (check tips)
  • 3/4 c. chocolate chips
  1. Step 1

    Prepare the egg replacer first, and put in your mixing bowl.
    Add the vegetable oil and the vanilla and mix until blended.

  2. Step 2

    One at a time, add the following to your mixer: rice flour, oat flour, baking soda, salt, brown sugar, and white sugar.
    Add 1 T. Vegetable shortening and 1 T. water to help the dough all stick together. Mix until blended.

  3. Step 3

    Add the quick oats and chocolate chips. I prefer to mix this final step by hand, but using a mixer is acceptable as well.

  4. Step 4

    Put rounded tablespoons of dough onto a baking stone or a parchment-covered cookie sheet and bake at 350 degrees for 11 to 13 minutes. Enjoy! Makes 2 dozen cookies (More if your children and hubby don't sneak some of this egg-free cookie dough before cooking!)

Tips & Warnings
  • Depending on the result of the dark chocolate vs. milk chocolate debate at your household, you might prefer milk chocolate chips in this recipe.
  • Oats contain a small amount of gluten,and are not recommended for a gluten-free diet, however are fine for a wheat-free diet. Gluten-Free Oats are available at most health food stores.
  • Check that your Vanilla Extract is wheat-free. Again, health food stores have gluten-free options.
