Things You'll Need:
- 1-1/2 t. Egg Replacer (prepare with 2 T warm water)
- 1/4 c. vegetable or canola oil
- 1 t. vanilla
- 1/2 c. white rice flour
- 3/4 c. oat flour
- 1/2 t. baking soda
- 1/4 t, salt
- 1/2 c. brown sugar
- 1/4 c. white sugar
- 1 T. Vegetable shortening
- 1 T water
- 3/4 c. quick oats (check tips)
- 3/4 c. chocolate chips

Step 1
Prepare the egg replacer first, and put in your mixing bowl.
Add the vegetable oil and the vanilla and mix until blended. -
Step 2
One at a time, add the following to your mixer: rice flour, oat flour, baking soda, salt, brown sugar, and white sugar.
Add 1 T. Vegetable shortening and 1 T. water to help the dough all stick together. Mix until blended. -
Step 3
Add the quick oats and chocolate chips. I prefer to mix this final step by hand, but using a mixer is acceptable as well.

Step 4
Put rounded tablespoons of dough onto a baking stone or a parchment-covered cookie sheet and bake at 350 degrees for 11 to 13 minutes. Enjoy! Makes 2 dozen cookies (More if your children and hubby don't sneak some of this egg-free cookie dough before cooking!)
