Step 1
Twice Stuffed Baked Potatoes make an excellent side dish and are easy to make. You will need, About 8 Idaho Baking Potatoes, 1 teaspoon salt, 1 teaspoon pepper, 1 teaspoon garlic powder, 1 cup fresh Parsley, 1 cup milk, 1/2 cup shredded Cheddar cheeese, 1 cup bacon bits, 1 cup of Scallions.

Bake Potatoes at 375 for 55-60 minutes. Remove Potatoes allow to cool for about 10 minutes (it is important to allow some cooling time after removing potatoes from oven). Slice Potatoes in half, remove contents of Potato, place in large mixing bowl. Add milk, cheese, salt, pepper, garlic powder, parsley, beat with electric mixer for about 2 minutes.

With large spoon begin to fill Potato skins with potato mixture that you prepared, fill with generous amounts of mixture. When finished, sprinkle bacon bits on top for a final garnish. Place in oven at 375 for about 10 minutes, serve hot. You can add Paprika as a final garnish if desired.
