How to Temper an Egg
A while back,I was making some desserts for a family reunion.One of the recipes that I was making had instructions to temper in the egg.I seriously had no idea what that meant.I was like why in the world would this egg get an temper?I am supposed to make the egg mad?It would have been nice if the recipe had explained how to temper an egg.It would have made life so much easier.I had called my mom and everyone elses' mom.Nobody had the answer.However I did find the answer from my nieghbor.A bachelor who knows how to temper eggs.
Tempering is done alot for recipes lie custards and souffle.This is done with the egg yolks,not the egg whites as they give the air.

Add a small amount of the hot liquid or substance to the egg,stirring vigorously.

Once the egg is well incorporated you can add a little more then stir some more.Then you can place the mixture back in the pot.

It is crucial that you add them very slowly to what ever you are cooking.If not,you will end up with scrambled eggs.This is why it is very important to slowly bring them up to the same tempature as what is in the pan.
