How to Make Herbal Infused Honey

Are you a fan of honey? Not just any honey.. local honey? Do you love to add fresh herbs to your dishes at home?

I have recently become a fan of herbal infused honey. Get the best of both worlds. With this concoction you can get all of the benefits from the herbs and the honey.

Difficulty: Moderately Easy
Instructions
  1. Step 1

    A friend of mine on the internet gave me this recipe. I have enjoyed it and now I want to share it with all of you.

    Gather, wash and air dry fresh herbs. I make two types, lavender, and rosemary. You could do any or a combination of herbs, though I've not tried any combinations.Crush the leaves with the bottom of a cup or bottle and place in a jar. Cover the herbs with honey and place in a dark cabinet for 2-3 weeks.

  2. Step 2

    Check weekly for taste and when you're satisfied with it, strain the herbs out, label your jars and sell it. The more herbs you use the shorter your cure time, or the stronger your taste will be.

  3. Step 3

    Here is a short list of herbs and their uses.
    *Dandelion
    Rich in sodium, Vitamin A, and calcium; beneficial for low blood pressure, issues with kidneys and bladder, iron anemia, and gout. A diuretic.
    *Fennel
    Reduces flatulence, relieves colic, aids digestion
    *Lavender
    Has been used for centuries as an herbal remedy, and does indeed appear to have antiseptic, anti-bacterial, anti-fungal, anti-inflammatory, anti-convulsive, and last but certainly not least - anti-depressant properties.
    *Rosemary
    Has been around for a long time, and therefore has a long list of claims regarding its medicinal uses, including use as a tonic, a digestive aid, to treat depression, headaches, and muscle spasms, and as an expectorant, promoter of menstrual flow, and stimulant for production of bile.
