This is a recipe for easy crock pot Santa Fe chicken. This is hearty yet healthy meal for a busy family. You can throw this is the crock pot in the morning and have a wonderful meal when you return in the evening.

Instructions

Things You'll Need:

  • Crock pot
  • 2-4 chicken breasts
  • 1 can corn drained
  • 1 can black beans drained
  • 1 can kidney beans drained
  • 2 cans diced tomatoes
  • 1 envelope of taco seasoning
  1. Step 1

    Place your raw chicken breasts into the crock pot.

  2. Step 2

    Open, drain, and rinse the cans of kidney beans and black beans. Once they are rinsed place them in the crock pot.

  3. Step 3

    Open the can of corn and drain it. Place it in the crock pot.

  4. Step 4

    Open the cans of diced tomatoes and place them in the crock pot.

  5. Step 5

    Pour the taco seasoning over the mixture and mix slightly.

  6. Step 6

    Place the lid on the crockpot and cook on low for 8 hours or on high for 4-6 hours.

  7. Step 7

    When you are ready to serve the meal tear the chicken apart with a fork. Once it is shreaded you can serve with tortillas, cheese, and sour cream.

  8. Step 8

    This is also good when served as a soup. You can top with tortilla chips, cheese and sour cream.

  9. Step 9

    Enjoy your meal!
