Things You'll Need:
- 1/2 cup milk (if your batter is too stiff, you can add up to another 1/4 cup until you get the consistency you wish)
- 1/2 cup quick-cooking oats
- 2 tablespoons butter, melted
- 1 egg, separated
- 1 cup all-purpose flour or half all purpose and half whole-wheat
- 2 teaspoons baking powder
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt

Step 1
Heat the milk. In a large bowl, place the oatmeal and, over it, pour the hot milk. Leave to stand for 10 minutes. Meanwhile, separate the egg and beat the white stiff. Set aside.

Blend together the flour, baking powder, sugar, and salt. When the oatmeal is soaked, stir into it your egg yolk. Next pour in your dry ingredients and blend thoroughly. If you batter is too thick, add some more milk.

Heat oven to 200 degrees. Butter your griddle lightly and heat it. Now, fold your beaten egg white into the batter. This method will ensure that your cakes are fluffier. Spoon batter onto the griddle, about two tablespoonfuls at a time. Lightly brown. Turn and lightly brown on the other side. Keep cooked cakes warm in oven until all have been cooked. Serve. Enjoy!
