Things You'll Need:
- 1 package of 9x14 or 18 by 14 phyllo dough
- 1 small package of thawed frozen spinach
- 1 large bunch of fresh spinach
- 1 pound of Greek feta cheese
- 2 cloves of fresh garlic chopped or 1 tablespoon of garlic powder
- 1/2 tablespoon of salt
- 1/2 tablespoon of black pepper
- 1/2 cup finely chopped white or yellow onion is optional
- 1 stick of real butter melted
- A baking pan that measures the size of phyllo sheets being used.
- A kitchen basting brush

Step 1
Brush your baking pan with a light layer of melted butter and preheat the oven to 350`F (175 C). Do not open the phyllo dough until it is time to start making the pie. Wash the fresh spinach and finely chop. Rinse the thawed frozen spinach and chop if needed. Finely chop or crumble by hand the pound of feta cheese.

Step 2
Combine spinaches, onion if you choose, garlic, feta, salt, and pepper into a large mixing bowl. Mix ingredients thoroughly.

Open the phyllo dough and unroll the dough onto a large counter surface. Place your greased baking pan, melted butter, basting brush, and bowl of combined ingredients next to the dough. Take two sheets of phyllo at a time and lay them in the bottom of the pan, brush the top of them with butter, lay two more and again brush with butter. After laying four sheets add a layer of the spinach cheese mixture. Make sure to butter every two sheets and add a layer of mixture every four sheets. Once all the mixture is layered top with two or three sheets of phyllo and butter generously on top making sure to butter all the edges letting butter drip down around the corners.

Cover with foil and bake for 45-60 minutes then un-cover and bake another 15-30 minutes until top is golden brown and crispy/flaky. Cut rite away while still in pan, let cool and serve.
