Things You'll Need:
- 6 Russet or Idaho potatoes
- 24 oz sour cream
- 1 8 oz bag of shredded mild cheddar cheese
- 1 cup of real bacon bits or pieces
- Microwave
- Green onions 1 bundle
-
Step 1
First, wash and chop up the green onions. You should cut off the root and chop up the white part of the onion and half of the solid green part of the onion. Set them aside for later. Next you will need to wash the potatoes and put them in the microwave until they are done. Let the potatoes cool until you can touch them. Get a large bowl ready. Next, get a spoon and cut around the peel of the potato leaving about 1/4 inch of potato on the skin. Place the potato that you scoop out into the bowl.
-
Step 2
Add the potatoes, cheese, bacon bits, sour cream, salt, pepper and green onions in the bowl and stir well. Take the mixture and scoop it back into the potato. You can eat them at the temperature that they are when you are finished or warm them a little in the microwave.
-
Step 3
You can freeze these after they cool. Put them in freezer bags and microwave them later.
