How to Bake Yummy Bran Muffins

You will really like the wholesome flavor and nutrition of these bran muffins with some honey and grated carrots to make them special.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 cup unprocessed bran
  • 1 cup whole wheat flour
  • 1/2 tsp. salt
  • 1 1/4 tsp. baking soda
  • 1/2 tsp. cardamon (optional)
  • 6 Tablespoons honey
  • 2 eggs
  • 1 cup grated carrots
  • 2 Tablespoons molasses
  • 3/4 cup of milk
  • 1/4 cup oil
  • muffin tins
  • spray oil or butter/margarine to grease muffin tins
  • OR- use paper muffin cups
  1. Step 1

    Preheat the oven to 350 degrees.
    Grease muffin tins or place paper muffin/cupcake cups in each section of the muffin tins.

    Put the dry ingredients in a bowl. Press the mound of ingredients down to make a well in these ingredients.

  2. Step 2

    Whisk the liquid ingredients and pour them into that well.

  3. Step 3

    Whisk all these ingredients together so that the dry ingredients are well moistened and the ingredients are well-distibuted throughout the batter.

  4. Step 4

    Pour this batter into paper-lined or greased muffin tins. Place the muffin tin in the center of your pre-heated oven.

  5. Step 5

    Bake 20-25 minutes at 350 degrees.
    To test for doneness: Insert a toothpick to the center of a muffin. If the toothpick comes out clean, the muffins are ready to come out of the oven.
    Empty out onto wire cooling racks.

Tips & Warnings
  • This makes one dozen yummy muffins. You may want to double the recipe and freeze some of these muffins for later. They make a quick, nutritious breakfast-to-go, or a mid-morning or mid-afternoon snack.
