Things You'll Need:
- 1 large can of chickpeas
- 1 vegetable soup cube, dissolved in 1/3 cup warm water
- 1 1/2 teaspoons Dijon mustard
- 1 large carrot, grated
- 1 medium onion, finely chopped
- 3/4 cup whole wheat crackers, finely crushed
- 2 teaspoons parsley - if using fresh about 2 tablespoons, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons thyme
- 1 tablespoon of seasoning blend of your choice
- 2 eggs, beaten
- olive oil for frying

Step 1
Drain the canned chickpeas. (If you want to use fresh chickpeas, put them in a heavy saucepan and cover with water. Bring the water to the boiling point and simmer for about 40 minutes or until the peas are tender. Drain, cool, and chop.) Chop them coarsely in a large bowl. Mix the chickpeas with the soup cube that has been dissolved in the warm water.

Add the mustard, the carrot, the onion, the cracker crumbs, the parsley, the salt, the pepper, the thyme, and the seasoning blend. Stir in the beaten egg and mix thoroughly. If you like your burgers spicy, adjust seasonings accordingly.

Heat the oil in a heavy fry pan. While the oil is heating, divide the burger mix into 8 even portions. Form the portions into patties no more than 1/2 inch thick. Fry the patties until they are golden on both sides. This will take about 4 minutes per side. Serve with fries and your favorite toppings. Enjoy!

on 5/23/2009 Vegetarian Chickpea Burgers look interesting. I've made burgers of black beans and they were good, and I bet these are too. Will sure give this one a try.
