1
Forget the puny chicken wings, use chicken drumsticks instead to make them a fabulous size that will surprise everyone. Make sure that enough are purchased to equal at least four per person to start. It is likely that people will eat more than four unless a lot of other food choices are available.

2
Make this new version of hot wings just a little healthier to eat. Remove the skin with a sharp knife.
-
-
3
Coat the hot wings in buttermilk, then bread them for frying or use an oven fry mix for baking. Let the coating dry for 10 minutes on each side. This will give a crispier result when baking or frying and helps the coating adhere.
-
4
Bake or fry the hot wings and drain on paper towels.
-
5
Prepare and have the hot sauce or home made blend ready to serve on the side. Do not cover the hot wings with sauce, they should be individually dipped when eaten to prevent sogginess. Serve the sauce on the side.

Accept all the compliments graciously and do not be surprised if others start making their own this way. Crispy crunchy breading is good, and these hot wings are a real bonus because there is actually a verifiable quantity of chicken meat on them.

Great suggestion for letting the breading dry to increase crispy-ness. Also, using drumsticks is fantastic - the more meat the better! Thank you! -
