Fresh Mexican Guacamole Dip

Chips and salsa are great for parties, but Fresh Guacamole is a fun and tasty way to spice things up a notch. Here's a recipe for an easy and quick Guacamole for any party, meal or even dinner. Can be served as an appetizer or added to your tacos and burritos instead of salsa.

Instructions show you how to make it mild, but if you like it HOT just add more jalapeño.

Instructions

Things You'll Need:

  • 3-4 ripe avocados
  • 1-2 minced garlic cloves
  • 1 – 2 limes or 2 teaspoons lime juice
  • 2 tbsp. minced cilantro or chives
  • 1 – 2 small tomato - cubed
  • 1 – 2 Jalpeños cubed (the smaller the better)
  • 2 tbsp. Real Mayonnaise or sour cream
  • Salt and pepper to taste
  1. Step 1

    Use the ripest avocados you can find - they should be soft when squeezed gently. Avoid brown avocados or too soft which are too ripe.

  2. Step 2

    Cut each avocado in half, working around the large, smooth pit. Separate the avocado halves and remove the pit, gently with a knife.

  3. Step 3

    Scoop the avocado flesh out of the skins with a clean, wet tablespoon.

  4. Step 4

    Use a fork to mash the avocados until smooth - some chunks are OK. Use a food processor for large amounts of avocado if you like, but avoid over processing.

  5. Step 5

    Add all ingredients together with fork.

  6. Step 6

    Serve immediately with tortilla chips. can be chilled.

Tips & Warnings
  • A potato masher works very well to mash avocados.
  • You also can use chile powder, salsa or fresh garlic, if desired.
  • If you know you won't be able to find ripe avocados, plan to buy unripe ones five days ahead of time so they'll have a chance to ripen.
  • If you want to use a food processor try a slice or 2 of American Cheese.
  • Makes 6 to 8 servings.
  • Can be made ahead of time, if you chill cover with a plastic lid or plastic wrap.
  • Remix before serving.
