How to Make Kolaches

This kolache recipe is for the novice. You may also use this recipe for cinnamon rolls or dinner rolls.

Instructions

Things You'll Need:

  • 1 Tablespoon Sugar
  • 1/2 Cup Warm Water
  • 1/2 Cup plus 2 Tablespoon Butter
  • 2 Egg Yoks
  • 6 + Cups Bread Flour
  • 2 Package or 5 Teaspoon Yeast
  • 2 Cups Milk
  • 2 Teaspoon Salt
  • 1/2 Cup Sugar
  • 1 1/2 Sticks Melted Butter
  1. Step 1

    Place yeast in bowl, sprinkle with 1 Tablespoon Sugar and cover with 1/2 cup warm (105-115) degrees water. Yeast should begin to work.

  2. Step 2

    Warm milk and 1/2 cup plus 2 Tablespoon butter in microwave or on top of stove. (it just needs to be warm enough to melt butter). Make sure it is only luke warm before you add salt, beaten egg yolks and 1/2 cup sugar.

  3. Step 3

    Combine milk mixture and yeast mixture. Add four cups of flour and mix. Slowly add more flour until mixture is workable. It works best if left a little sticky.

  4. Step 4

    Place in bowl and cover. Place in warm place. Allow to rise until double in size..about 45 minutes.

  5. Step 5

    Punch dough down and knead lightly. Pinch off egg sized portion and form into ball. You will need to work with floured hands. Place on baking sheet that has been sprayed with non stick spray. Place about 1 inch apart.

  6. Step 6

    Let rise about 15 minutes and make indention in center with your thumbs. Fill with your favorite fruit filling and let rise again about 45 minutes.

  7. Step 7

    Bake at 350-375 degrees for approximately 20 minutes...until lightly browned. Slather with melted butter and remove from pans once they have cooled slightly. Makes approximately 4 dozen.

Tips & Warnings
  • Using bread flour will make a lighter, fluffier kolache but all purpose flour may be used.
  • Any pie filling may be used or you may make your own filling.
  • Margarine may be substituted for butter but I prefer butter.
  • I use a pastry brush to butter my kolaches.
  • The filling is very hot so remove from pans with caution.
