Winter is the time for crockpots and the savory smell of a yummy dish simmering all day. Going through my pantry and freezer a couple days ago I made this delicious but incredibly simple crockpot meal which disappeared in one sitting.

Difficulty: Easy
Instructions

Things You'll Need:

  • 4 large boneless chicken breasts
  • 2 cans cream of chicken soup
  • 2 cans cream of mushroom soup
  • rosemary
  • half of a medium onion coarsely chopped
  • tablespoon of sliced garlic
  • 5 ounces white grenache (or comparable) wine
  • salt & pepper to taste
  • bag of egg noodles
  • garlic toast or rolls
  • side dish of vegetables of your choice
  1. Step 1

If the chicken breast is frozen completely defrost it. Once chicken is defrosted, place it in the crock pot. Sprinkle with a little rosemary. Place onion and garlic on top of the chicken. Pour two cans of cream of chicken soup and 2 cans of cream of mushroom soup over the top. Add 5 ounces of white grenache or a wine of your choice. Sprinkle with salt and pepper to your taste. Cover the pot and turn on high.

  2. Step 2

Allow the crockpot to bring the ingredients up to temperature enough that the soup begins to run off the chicken. Stir the ingredients blending them well. Replace cover.

The next step depends on your crockpot, I used an oblong one with a metal "pot" which heats very quickly on high. Once the ingredients have begun to bubble nicely turn the crockpot down to low. Allow to cook for 4-6 hours until the chicken is thoroughly cooked and the soup and wine has turned to a nice thick gravy.

  3. Step 3

Cook egg noodles per package directions and drain. Place egg noodles on a plate and add a chicken breast to the top. Add enough gravy to make the noodles "saucy". Serve with either garlic toast or rolls and a side of vegetables of your choice. Enjoy!

Tips & Warnings
  • Crockpots cook at different temperatures so times are approximate.
  • Ensure that the chicken is thoroughly cooked.
  • Bone in chicken can be substituted but be very cautious as crockpot cooking of this type of chicken tends to yield small bones in the sauce that can be easily choked on.
