Things You'll Need:
- 8 oz. cream cheese
- 1 egg
- 1/3 cup sugar
- 1/8 tsp. salt
- 1 6oz pkg chocolate chips
- The Cake Batter follows:
- 1 1/2 cups sifted all purpose flour
- 1 cup sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 cup cocoa
- 1 cup water
- 1/3 cup oil
- 1 T vinegar
- 1 tsp vanilla
- Paper cupcake liners
- Muffin tins

Step 1
Place cream cheese, egg, 1/3 cup sugar and 1/8 teaspoon salt in a bowl. Beat well until mixed. Stir in chocolate chips until they are well covered with the cream cheese mix. Set aside.

In another bowl (I like to use one of those really large plastic measuring cups so I can use the pour option) beat all remaining ingredients until well blended.

Place cupcake liners in muffin tins. Fill the cupcake liners 1/3 full of the flour mixture. Top each with a heaping teaspoon of the cream cheese mixture.

Bake at 350 degrees for 25 - 30 minutes. Remove from oven and place the cupcakes on a cooling rack. Do not overcook the cupcakes. There is no need to frost. You will have so much flavor from the cupcake itself and it will be so moist you will not need to add a topping.
