Making homemade potato skins is easy and delicious! The secret ingredient is chili powder. Follow these easy steps to make them yourself and wow your friends and family!

Instructions

Things You'll Need:

  • 4 small potatoes
  • 2 Tbsp vegetable oil
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/2 an 8 oz bar of extra sharp cheddar cheese
  • 6 slices of bacon
  • 1/2 tsp dried or fresh chopped chives
  • sour cream, if desired
  1. Step 1

    Pre-heat oven to 450 degrees. Cook bacon until crispy in a frying pan on medium-high heat. Set aside to drain on paper towels.

    Poke holes in potatoes and place in microwave for 8 minutes on high. Cut each potato in half and scoop out some of the cooked center of the potato and discard. Brush with oil and sprinkle chili powder and garlic powder on each half. Bake for 15 minutes.

    While the potatoes are baking in the oven, cut up bacon and shred cheese. Remove potato skins from oven. Top with cheese and bacon. Sprinkle with chives. Put back in oven for 5 to 10 minutes, or until cheese is melted.

  4. Step 4

    If desired, serve with sour cream, garnished with chives, for dipping.

Tips & Warnings
  • When potato skins come out of the microwave they will be HOT. Be very careful handling them.
