For quick and easy compote, that is rich in antioxidants, calcium, and vitamin D, look no further. This healthy recipe is exactly what you have been seeking. Here are some tips on how to prepare cranberry compote with a tropical twist.

Instructions

Things You'll Need:

  • 16 ounces of fresh cranberries
  • 1 cup of blueberries
  • 2 diced tangerines
  • 1 diced pink grapefruit
  • 1/4 cup of orange juice
  • 1 cup diced fresh mango' s
  • ¼ cup of refined Sugar
  • 2 tablespoons of B&B Liquor (optional)
  • Chef knife
  • Cutting board
  • Saucepan
  1. Step 1

    Prepare the compote by pouring orange juice into the saucepan. Set the stove on medium to warm the orange juice.

  2. Step 2

    Rinse your cranberries with water. Drain off the excess water, and remove cranberries that have brown spots. Add the cranberries to your saucepan. Turn the heat on the stove to medium high.

  3. Step 3

    Peel the skin from your mango' s. There is a stringy texture close to the mango seed. Refrain from adding this stringy mango pulp to your compote. Fine dice the mango. Four small mango' s will equal 1 cup, or two large mango' s will equal 1 cup. Put the diced mango into your sauce pan

  4. Step 4
     

    Peel the tangerines, and grapefruits. Remove the seeds, and then fine dice. When you are finished, add the citrus to your pan. Add the blueberries and Place the saucepan onto the stove.

  5. Step 5
     

    Heat uncovered at medium-high. Stir the mixture, so that nothing sticks to the bottom of the saucepan. Rotate the fruit so that the bottom comes to the top. Allow the mixture to boil and then turn to simmer. Allow the compote to simmer for an additional 30-40 minutes. When fruit is in simmer stage you will now add your sugar and the B&B Liquor. Stir every 4 minutes until compote is fully cooked. When cranberries burst, this is a sign that compote is finished.

  6. Step 6
     

    Remove from the stove and allow the compote to cool. Your compote will be ready to serve in a half hour.

Tips & Warnings
  • Compote tastes great when served warm over ice cream or vanilla yogurt
  • This Compote can also be served as a cold side dish. It will compliment chicken, pork, and turkey
  • Add the compote to your smoothie.
  • Cover and refrigerate, will keep for a week.
