Things You'll Need:
- 5 eggs
- 1/4 cup sugar
- 2 cups Marscapone cheese
- 3/4 cup very strong black Coffee
- 1/4 cup Dark Rum
- 24 sponge finger cookies
- 2 oz unsweetened cocoa powder

Step 1
In a bowl, whisk the egg yolks and sugar until pale and thick. Fold in the marscapone cheese and Rum. Take your electric mixer and switch to medium to high speed. Beat the egg whites until soft peaks form. Take 1/3 of the egg whites and stir into the marscapone mixture. Take the remaining egg whites and fold in to the mixture.

Pour the strong coffee into a bowl and dip each lady finger cookie into the coffee for about 1-3 seconds. Line the base of a large serving dish or what I like to use are wine glasses, with half of the sponge cookies. Gently spread the marscapone mixture over the sponge fingers. If you are using the wine glass take a pastry bag and pipe in the marscapone mixture into the glasses.

Sprinkle with half of the cocoa. Repeat with the remaining coffee, sponge, finger cookies, marscapone and cocoa if your using a large serving dish. If not just continue to add the sponge cookies and pipe in the mixture with a pastry bag and sprinkle with cocoa if you are using wine glasses. Refrigerate overnight or until it sets up. Serve Chilled. This recipe will probably be enough for 6-8 servings. ENJOY!
