Pacific islands style - roasted crispy salmon coated in sesame seeds, served with a tropical ginger blend.

Instructions

Things You'll Need:

  • 2 salmon steaks
  • 2 shallots, minced
  • 1 tablespoon peeled, grated ginger
  • Olive oil
  • 2 teaspoons chili oil
  • 1/3 cup dry sherry wine
  • 1/2 cup bottled clam juice
  • 3 tablespoons soy sauce
  • Salt and freshly ground black pepper, to taste
  1. Step 1

    Combine the ginger, shallots, chili oil, clam juice, sherry, and soy sauce in a oven dish.

  2. Step 2

    Place the sesame seeds in a flat pan. Brush the salmon steaks with olive oil and put the flesh side of the steaks in the sesame seeds. Set aside.

  3. Step 3

    Preheat the oven to 375 degrees F. Sprinkle the salmon steaks with salt and pepper.

  4. Step 4

    Heat the olive oil in a heavy skillet over medium-high heat. Place the steaks to the skillet and sear until crisp golden brown on both sides, about 1-/1/2 minutes per side. Be careful not to burn the sesame seeds.

  5. Step 5

    Put the seared fish (sesame seeds up) on the cooked ingredients made in Step 1 and put the dish in the oven. Roast until the fish is cooked to your preference (e.g. 5 minutes for medium rare). Serve the salmon immediately. Makes 2 servings for main entree, or for 4 persons as a side dish.
