Rigatoni pasta with spicy Italian sausage and bell peppers in tomato sauce.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1lb. rigatoni pasta
  • 1/4 cup extra virgin olive oil
  • 1lb. spicy Italian sausages
  • 2 red bell peppers, cored, seeded and sliced
  • 2 yellow onions, sliced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 garlic cloves, chopped
  • 1/2 teaspoon dried oregano
  • 1/2 cup fresh chopped basil
  • 2 tablespoons tomato paste
  • 1 cup Marsala wine
  • 1 can (14oz.) diced tomatoes, with juice
  • 1/4 teaspoon crushed red chili pepper flakes (optional)
  • freshly grated Parmesan cheese
  1. Step 1

    In a large skillet, heat the olive oil over medium heat. Add the sausages, brown them on all sides (about 8 to 10 minutes). Remove the sausage.

  2. Step 2

    Add the onions, bell peppers, salt and pepper to the skillet. Cook for 6 minutes or until golden brown. Add the garlic, oregano and basil.

    Cook for about 1 minute.

  3. Step 3

    Add the tomatoes with juice, tomato paste, Marsala wine, and red pepper flakes (if using). Stirring and blend well all the ingredients. Turn heat to a simmer.

  4. Step 4

    Slice the Italian sausages into bite size pieces. Return the sausage to the skillet. Cook on simmer (lowest heat setting on your stove) until the sauce is thickened and chunky, about 25 minutes.

  5. Step 5

    Cook the pasta until firm while the contents simmers. Drain the pasta, then add to the cooking sauce. Toss and combine everything, then turn off heat. Sprinkle with Parmesan cheese. Serve hot.

    Recipe for four persons.
