Things You'll Need:
- Orange Sherbet
- - 3/4 cup fresh orange juice
- - grated rind from one large orange
- - 1 1/2 cups white sugar
- - 3 cups water
- Lemon Sherbet
- - replace the orange juice and rind from the orange sherbet with 1/3 cup of fresh lemon juice and the grated rind of one large lemon
- Pineapple Sherbet
- - replace the orange juice and orange rind in the orange sherbet with 3/4 cup of pineapple juice - no rind
- 2 tablespoons fresh orange juice

Step 1
To make these sherbets, you need a large refrigerator tray. The recipe makes one quart of sherbet. You must check frequently to make sure you stir and mash at the right time but otherwise the process is simple.

For the orange sherbet, place the orange juice and grated rind in a small bowl. Leave to soak. Meanwhile, place the white sugar and the 3 cups of water in a heavy saucepan and bring to a boil. Stir until the sugar is dissolved and then boil gently for 20 minutes. Remove from heat and let mixture cool. Add the rind and juice to the sugar and water. Stir well and pour into freezer tray. Place in freezer. When the mixture begins to freeze, stir it thoroughly. When the mixture is just frozen, stir it up and mash thoroughly with a large spoon or potato masher. Return to freeze again. Serve when it reaches sherbet consistency. Follow directions exactly and you will have a perfectly smooth sherbet.

For lemon sherbet, follow the directions for the orange sherbet exactly.

For the pineapple sherbet, follow the directions for the orange exactly without any rind addition. Add the orange juice and the pineapple to the sugar mixture at the same time. Proceed as above. Enjoy your sherbet!
