How to Make White Chili with Chicken

This is a recipe for white chili. Most people know red chili, the type that Texas is famous for.
White chili is made with pork or chicken, green chilies and white beans. It's a simple recipe, just takes the time to cook it like a good red chili.
This one will be with chicken

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 cups of chopped onion
  • 2 cloves of minced garlic
  • 1 tablespoon of olive oil
  • 2 15 oz cans of white beans, drained
  • 1 14.5 oz can of chicken broth
  • 2 4 oz cans of diced green chiles
  • 2 tablespoons of Italian seasoning
  • 4 cups of cubed cooked chicken breast
  • 1 cup of shredded Monterey jack cheese
  • 1 cup of chunky salsa (mild or hot)
  • 1/2 cup of chopped fresh cilantro
  • A 4 quart pot to cook it all in.
  1. Step 1

    Preheat a 4 quart pot while preparing the ingredients.

  2. Step 2

    Add the olive oil and onions and garlic.
    cook until they are tender.

  3. Step 3

    Stir in the beans, chicken broth, chiles, and seasoning.

  4. Step 4

    Bring the liquid in the pot to a boil.

  5. Step 5

    Reduce the heat and let simmer for about 10 minutes.

  6. Step 6

    Stir in the chicken and let it heat through, letting it soak up some of the flavors.

  7. Step 7

    Serve hot in a bowl with some of the Jack Cheese, a spoon of salsa, and a bit of cilantro on top.
    Soft flour tortillas warmed in the microwave or toaster oven go well with this.

Tips & Warnings
  • This can also be made with the other white meat, pork.
  • To really spice it up you can choose other chiles like jalapeno or Serrano.
  • Use navy beans, cannelloni beans, or any other white beans.
  • Cut the Italian Seasoning to 1 1/2 teaspoon and add 1/2 teaspoon of cumin for a smokey Mexican flavor.
  • Do not let the liquid boil out as that will scorch the bottom and the chili will taste burnt
