Things You'll Need:
- 2 cups of chopped onion
- 2 cloves of minced garlic
- 1 tablespoon of olive oil
- 2 15 oz cans of white beans, drained
- 1 14.5 oz can of chicken broth
- 2 4 oz cans of diced green chiles
- 2 tablespoons of Italian seasoning
- 4 cups of cubed cooked chicken breast
- 1 cup of shredded Monterey jack cheese
- 1 cup of chunky salsa (mild or hot)
- 1/2 cup of chopped fresh cilantro
- A 4 quart pot to cook it all in.

Step 1
Preheat a 4 quart pot while preparing the ingredients.

Add the olive oil and onions and garlic.
cook until they are tender. -
Step 3
Stir in the beans, chicken broth, chiles, and seasoning.

Bring the liquid in the pot to a boil.

Reduce the heat and let simmer for about 10 minutes.

Stir in the chicken and let it heat through, letting it soak up some of the flavors.

Serve hot in a bowl with some of the Jack Cheese, a spoon of salsa, and a bit of cilantro on top.
Soft flour tortillas warmed in the microwave or toaster oven go well with this.
