How to Make Nutritious Homemade Chicken Noodle Soup

With the onset of a cold, the first thing many people crave is a piping hot bowl of chicken noodle soup. Whether you are looking for a meal to warm you up on the coldest nights or a way to sneak nutrition in to a classic that kids love, this recipe is sure to please.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 8 tbs Chicken Stock
  • 2 Cups of precooked chicken chopped into bite size pieces
  • 1 cup of carrots
  • salt/pepper
  • 2 1/2 cups of flour
  • 1/2 tsp salt
  • 1 Egg
  • 1/2 cup Canned Butternut Squash
  • 1/3 cup of water
  • 1 tsp oil
  • Benefiber (optional)
  1. Step 1

    Prepare your chicken soup broth by adding 1 cup of water to the blender along with the carrots. I use a handful of baby carrots but you could use any carrots you want. Blend the carrots until they are pureed. Pour 7 cups of water and the chicken stock into the soup pot. Add the pureed mixture to the pot.

  2. Step 2

    Add chopped chicken breast to the pot. Allow to boil.

  3. Step 3

    To make the noodles, place the flour into a large mixing bowl. Scoop the flour in the center to create a well. Put the egg, 1/3 cup of water, salt, squash, and oil into the well. Add the Benefiber now if desired. Mix the flour in a little at time. Once the dough becomes to thick to mix with a spoon, grease your hands and turn it out onto wax paper or the table top. Knead in the rest of the flour until the dough becomes smooth.

  4. Step 4

    Roll the dough out to about 1/4 inch thick.

  5. Step 5

    Using a pizza cutter, cut the dough into one inch noodles.

  6. Step 6

    Add noodles to the soup pot. Cook for at least 15 minutes. Enjoy.

Tips & Warnings
  • Season the soup to your desired taste with salt and pepper.
  • If desired, celery and carrots can be added.
