How to Run a Hockey Offense: Breakout up the Center
A lack of defending forecheckers is the key in switching from a breakout play up the boards to one up the center.

Ensure that your defender has received control of the puck in the corner.

Skate the defenseman toward the net, and note how closely the forechecker is pursuing.

Note that the defense carrier moves into center ice. The other team may now enter a defensive stance and open passing lanes.

Have your defender pass to the center.

Instruct the center to pass to a breaking wing, who moves into the neutral zone and toward the goal.

Tips & Warnings
If the passing lane is open, have your defense make a longer pass to a wing in the neutral zone. You may risk an interception, but bypassing the center, you may catch the defense by surprise. Besides, your wing has already gained speed for a nice conversion.
Your defense must make short and accurate passes to the wings or risk losing the puck in front of the net - ripe for a forechecker to convert into a goal.
If the forechecker is close behind when your defense first gains control of the puck, do not run through the center. Switch to a breakout play up the boards.
