Things You'll Need:
- 1/2 cut fresh lime juice
- 1 1/2 tbsp brown sugar
- 1/2 tsp. crush red pepper
- 1 lb cod fillets
- 1 large red bell pepper, cut into 1 inch pieces
- 1 1/2 cups fresh pineapple, cut into 1 1/2 inch pieces
- 1 small purple opinion, cut into 1 inch pieces.

Step 1
In a bowl, combine lime juice, brown sugar, and red pepper in a small bowl and set them a side.

Thread cod, read pepper, pineapple and onion evenly onto a six 8 inch skewer and place them in a dish or a big pan.

Drizzle the lime juice mixture on the cod kabobs, cover, and chill for 30 minutes.

Coat the grill rack with a non-stick cooking spray. Preheat the grill to a medium-high direct heat.

Grill the skewers for 5-7 minutes on each side, turn occasionally, or until fish flakes with fork, and covered with gill lid consistently.

Remove the cod kabobs when it is done and it is ready to serve with salad or rice.
