Cod Kabob is easy to make and is a great way to cook fish and make it interesting. A hit at your next dinner or get together is to grill Cod Kabobs.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1/2 cut fresh lime juice
  • 1 1/2 tbsp brown sugar
  • 1/2 tsp. crush red pepper
  • 1 lb cod fillets
  • 1 large red bell pepper, cut into 1 inch pieces
  • 1 1/2 cups fresh pineapple, cut into 1 1/2 inch pieces
  • 1 small purple opinion, cut into 1 inch pieces.
  1. Step 1

    In a bowl, combine lime juice, brown sugar, and red pepper in a small bowl and set them a side.

  2. Step 2

    Thread cod, read pepper, pineapple and onion evenly onto a six 8 inch skewer and place them in a dish or a big pan.

  3. Step 3

    Drizzle the lime juice mixture on the cod kabobs, cover, and chill for 30 minutes.

  4. Step 4

    Coat the grill rack with a non-stick cooking spray. Preheat the grill to a medium-high direct heat.

  5. Step 5

    Grill the skewers for 5-7 minutes on each side, turn occasionally, or until fish flakes with fork, and covered with gill lid consistently.

  6. Step 6

    Remove the cod kabobs when it is done and it is ready to serve with salad or rice.
