How to Make Twice Baked Chile Potatoes

This is an interesting and tasty twist on the Twice Baked Potato. This recipe serves 6.

Instructions

Things You'll Need:

  • 3 large baking potatoes
  • 1 tablespoon olive oil
  • 6 tablespoons butter, divided
  • 1/4 cup yellow onion, minced
  • 2 cloves garlic, minced
  • 3 green chiles - roasted, peeled, seeded and chopped
  • Salt to taste
  • 1 teaspoon black pepper
  • 1/4 cup milk
  • Parmesan cheese
  • Paprika
  1. Step 1

    Preheat oven to 400 degrees.

  2. Step 2

    Wash, scrub and dry the potatoes. Coat lightly with oil. Bake for 1 hour or until the potatoes are done.

  3. Step 3

    Heat 2 tablespoons of the butter in a frying pan, saute onions and garlic until onions are soft.

  4. Step 4

    Add green chile, salt and pepper to the pan and cook over low heat until the chile is warmed through.

  5. Step 5

    Cut potatoes in half lengthwise and scoop out the pulp being careful not to cut through the skin of the potato.

  6. Step 6

    Mix potato pulp with the chile and onion mixture. Stir in the 4 remaining tablespoons of butter and the milk. Spoon this mixture back into the potato shells.

  7. Step 7

    Sprinkle with Parmesan cheese and paprika, return to the oven and heat, at 300 degrees, for 15 to 20 minutes or until the potatoes are warmed through.
