How to Prepare Fennel Four Ways

Do YOU know fennel bulb? I just discovered its potential a few years ago, when I moved abroad and began foraging through local markets. Here are four scrumptious, satisfying ways to prepare this refreshing vegetable.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • lots of fennel
  • lemon
  • olive oil
  • salt and pepper
  • leeks or onions
  • apples
  • walnuts
  • gorgonzola
  • basil or fennel seed
  • toasted hazenuts
  • dried chives
  • fresh mint
  • bowtie pasta
  • broccoli
  • etc....
  1. Step 1
     

    Lemon Fennel Leek

    1 thinly-sliced fennel bulb
    three leeks, sliced into angled disks, pan fried in olive oil and salt, and cooled
    zest of 1 lemon
    a touch more olive oil
    a splash of juice (pineapple, apple, or lemon)
    fennel seed
    ground pepper
    1 apple, sliced thinly

    combine all ingredients.

    Would also be good with some nuts.

  2. Step 2

    Pear and Gorgonozola on the Half-shell

    1 lg onion
    3 pears, diced
    olive oil
    juice of ½ lemon
    basil or fennel seed
    mint (optional)
    salt and pepper
    crumbled gorgonzola

    Combine above ingredients gently, and fill endive leaves with mixture. Top with toasted pecan or walnuts.

  3. Step 3

    Crunchy Satisfaction Salad

    1 fennel bulb, chopped
    several small apples, chopped
    1 small onion, diced and blanched in hot water
    toasted hazelnuts, chopped

    Dressing:
    Olive oil
    Fennel seed and/or basil
    Juice + zest of 1 lemon
    Salt and pepper

    Mix dressing, and then toss with other ingredients.

  4. Step 4

    Broccoli Mint Pasta

    1 large head broccoli, steamed, and cut into bite-sized florets
    3 leeks, sliced into discs and fried in olive oil till blackened
    about 6 cups cooked pasta, bowties
    1 cup fresh mint, chopped
    1 fennel bulb, diced small and with lemon juice and zest squoze over it
    dried chives, a dash
    salt and pepper
    more olive oil

    chill cooked ingredients in fridge while preparing the others.

    Would be terrific with toasted nuts.
