Things You'll Need:
- 1 medium spanish onion (2 cups of onion rings)
- 5 tbsp. butter or margarine, divided
- 1/4 cup sour cream
- 1/2 tsp. dill weed
- salt and pepper
- 6 large eggs
- 2 tbsp. water
- Tomato slices
- Parsley sprigs
- 10 or 12 inch skillet

Step 1
Peel and thinly slice 1 medium sweet Spanish onion. Separate into rings. Melt 1/4 cup butter in skillet. Add onion rings and cook over low heat until tender. Stir in 1/4 cup sour cream, salt, and pepper to taste. Keep warm.

Beat 6 large eggs with 2 tablespoons water and 1/2 teaspoon salt. Heat a 10 to 12 inch skillet. Add 1 tablespoon butter, tilting pan to coat sides and bottom. When bubbling, add egg mixture.

Step 3
Cook until set on bottom, lifting sides to allow uncooked portion to run underneath. Spoon onions onto center of omelet. Fold one side over onions. Slide omelet onto plate, flipping to make another fold. Garnish with tomato slices and parsley sprigs. Enjoy your omelet.

on 1/8/2009 Unfortunately it can be hard to tell the difference. Spanish onions can be yellow, white, and red. If in doubt ask the produce man.
