Things You'll Need:
- Shredded or chopped lettuce
- shredded cheese
- diced chicken OR taco beef OR beans
- green onion or diced white onion
- cubed ripe avocado or a scoop of prepared guacamole
- prepared salsa
- diced tomato
- sliced black olives
- sour cream
- tortilla chips

Step 1
Chop or shred the lettuce. Use one of those bags of prepared lettuce if you like. You can even buy pre-shredded lettuce or use your food processor. Put some lettuce on individual plates or in a big serving bowl.

Add cold or warm diced cooked chicken on top of the lettuce, as much as desired. I personally like the chicken warm. This would be a great way to use up leftover chicken. You can season the chicken with taco seasoning if you like. OR add taco beef. OR add cooked and seasoned pinto or kidney beans.

Add a layer of shredded cheese on top of the chicken. Its nice if the chicken is warm and the cheese melts a little.

Add a layer of diced tomato and onions, if desired. Add cubed avocado or a scoop of guacamole.

Add some sliced black olives for a nice contrast as a garnish. You can buy sliced black olives in a small can.

Allow individuals to top their salads with salsa and sour cream. Sour cream will add a lot of fat so use sparingly or purchase a reduced fat/no fat version. My husband uses plain yogurt instead.

Serve with tortilla chips on the side. Or, serve inside a "tortilla bowl".
